Paper Wrapped Cupcakes.

Our family loves the local bakeries that are here in Hong Kong. Of course there are chain bakeries, but there is something about the Mom and Pop shop that we love supporting on a daily basis.

When we moved here we noticed the bakeries sold little individual cakes that were reminiscent of a cupcake with no icing. The cake didn't have your typical cupcake wrapper, it had a white paper wrapper that when pulled from the cake, was in the shape of a square.

You place your batter into these metal molds taller than a cupcake holder that are lined with grease proof paper. Once the little cakes are baked and cooled, they separate easily from the metal tin and you're left with a sponge cake that holds its own!
